Let me show you a simple Mexican-inspired rice and beans recipe you and your friends can enjoy.

➡️ Black beans are a good source of fiber, proteins, and vitamins. Coupling with the fragrant basmati rice, peppers, cilantro, and lemon juice only ensures this meal is both aromatic and healthy at the same time. The addition of strained tomatoes, cumin, paprika, and cayenne spices gives this dish the flavor we look for in Mexican-inspired meals.

➡️ This dish is for sure one of the easiest, most aromatic, and flavorful meals you could quickly fire up from your kitchen.

You now have one recipe in your back pocket you could go to whenever you need a Mexican-inspired meal or just to have an excuse to open that can of black beans in the back of your pantry.

RECIPE INGREDIENTS: (4 servings approx.) 1 Cup / 200g White Basmati Rice (washed thoroughly with water) 2 Cups / 1 Can (540ml Can) Cooked Black Beans OR Pinto Beans (drained/rinsed) 3 Tablespoon Olive Oil 1 +1/2 / 200g Cup Onion - Chopped 1 Cup / 150g Green Bell Pepper - Chopped 1 Cup / 150g Red Bell Pepper - Chopped 2 Tablespoon Garlic - finely chopped 3/4 Cup / 175ml Strained Tomatoes / Passata / Tomato Puree 1 Teaspoon Cumin 1 Teaspoon Paprika 1/4 Teaspoon Cayenne Pepper or to taste 1 Cup / 125g Frozen Corn kernels (you can use fresh corn) 1 Cup / 240ml (low sodium) Vegetable Broth **OR AS REQUIRED

✅πŸ‘‰ (**NOTE - Sometimes one batch of basmati rice is dried than the other so may require more liquid to cook. SO ADJUST ACCORDINGLY) Salt to Taste (I have added total 1+3/4 Tsp of Pink Himalayan Salt)

Garnish: 1+1/2 cup / 100g Green Onion - chopped 1/2 to 3/4 cup / 20 to 30g Cilantro (Coriander leaves) or to taste - chopped OPTIONAL - Lime or Lemon juice to taste (Taste the rice first and ADD ONLY IF IT’S NEEDED, I have added 1/2 tablespoon of lemon juice as I like it a bit sour) Black pepper to taste (I added 1/2 teaspoon) Drizzle of extra virgin Olive oil (I have added 1 tablespoon of organic cold pressed olive oil)

▶️ METHOD: Thoroughly wash the rice - a few times until the water runs clear. Drain 1 can of black beans. Set the rice and beans aside to drain any excess water. (Use a Wider Pot to cook this dish, the rice will cook more evenly without getting mushy). To a heated pot add olive oil, onion, red and green bell pepper, salt and fry on medium to medium high heat (depending on the heat of your stove) until the onions and pepper starts to brown. Adding salt to onion/peppers will release it's moisture and help it cook faster, so don’t skip it. Once the onion starts to brown, add the garlic and fry for about 1 minute or until fragrant. Then add the strained tomatoes, ground cumin, paprika, cayenne and mix well. Add the washed rice, cooked black beans, corn kernels, salt, vegetable broth and mix well. Bring to a boil and then cover and cook on low heat for about 15 minutes or until the rice is cooked (but not mushy). Uncover and turn off the heat. Add the chopped green onion, cilantro, lemon juice, black pepper, drizzle of olive oil and mix it very gently because rice is very soft at this point and over mixing can cause the rice grains to break. (NOTE: taste the rice before adding lemon juice and add lemon juice ONLY IF NEEDED) Cover and let it rest for 5 minutes before serving. This recipe is perfect for meal planning and can be stored in the refrigerator for 3 to 4 days.

▶️ IMPORTANT TIPS: - Use a Wider Pot to cook this dish, so that the rice can cook more evenly without getting mushy - Every stove is different so regulate the heat accordingly - The Cooking time depends on several factors - the type of pot being used, heat of the stove, moisture content of the ingredients etc. so please use your judgement and adjust the cooking time accordingly - Thoroughly wash the rice until the water runs clear to get rid of any impurities/gunk (it's an important step so please do not skip it) - This recipe is for white basmati rice, if you are using a different kind of rice adjust the water accordingly

First up my apologies to all DNTCCC posters for not posting any new pages on DNTCCC for a number of days. 



I am currently struggling with bad health, I have domestic matters taking up a lot of my free time and my failure to recruit any additional independent page posters other than The Ultimate Fangirl  (who has her own blog to take care of and posts pages on the WWWP Blog which take up a lot of her free time) means that in my absence and that of our other section poster Neil Enpre, the blog as become inactive.

As such I have decided to put the daily Crime News and Escape from Egypt and even the weekly recipe pages on hold and revert back to my original concept for DNTCCC of it being an Open Forum blog on which anybody can post their gripes about Disqus Channels and initiate a conversation about anything else they want to discuss including politics, religion, culture, pets, sports, TV, movies, theater, food, fashion, celebrity gossip etc etc  (as long as it does not violate basic Disqus rules  such as porn)

Constance Marten has denied causing her baby any harm - telling jurors she did "nothing but show her love".

Marten, who is from a wealthy family, and her partner Mark Gordon, 49, are on trial over the death of their newborn baby daughter Victoria while they were on the run.

Appearing in the witness box for the first time, she told the court she felt "disbelief, shock and intense grief" when she awoke in a tent and realised her baby had died on 9 January last year.

"I had her in my jacket and when I woke up... she wasn't alive," she said in evidence to the Old Bailey today.

Marten said: "We didn't want to accept she had passed away, it was too much to take in," and said she did not seek medical attention "because she definitely wasn't alive".

The 36-year-old told jurors she "said some parting words" before putting her daughter's body in a bag to carry her because they "didn't have anything else" and "toyed with the idea of cremation" after attending an Indian funeral.

Marten wept as she told the court: "At one point Mark said: 'Why don't we jump in with her and call it quits? Let's just all have a fire and say goodbye to life together'. We had just had enough at that point."

Victoria's badly decomposed body was found in a Lidl bag inside a shed on an allotment in Brighton, East Sussex, on 1 March last year, days after the couple were arrested on 27 February.

A nationwide search had been launched after a placenta was found in the couple's burnt-out car by the motorway near Bolton, Greater Manchester, on 5 January 2023.

Prosecutors say the couple went on the run for 54 days, living off-grid in a tent on the South Downs in wintry conditions, because they wanted to keep their baby, as their previous four children had all been taken into care.

While the cause of her death is "unascertained", jurors have heard she could have died from the cold or co-sleeping.

"I did nothing but show her love... I gave her the best [care] that anyone would have," Marten said.

"I don't think it's anything I will move on from. I feel guilty because she was in my arms. I feel like it's not an easy thing to live with."

'Very blessed'

The court heard Marten was privately educated before attending Leeds University and took photographs of the Egyptian revolution, as well as working for the news network Al Jazeera as a researcher.

She told jurors that travelling was her "passion" and that she had "been very blessed" after describing trips to India, Nepal, Nigeria, Uganda, Peru and throughout Europe.

Marten said she met Gordon in an Indian shop that sold incense but did not introduce him to her family, who she had broken ties with about two years earlier.

Marten said she and Gordon became good friends and went travelling to Peru, where they married in an unofficial wedding ceremony.

"Like any relationships we had our ups and downs," she said. "There's a lot of goodness there."

She said they went to Wales while "trying to flee my family" after her grandmother's estate was sold against the wishes of her will, and believed she was being "trailed by private investigators".

Marten said she was cut off "overnight" by her family while she was heavily pregnant with her first child, while her three brothers had houses bought for them.

"They treat me quite differently. I don't think they agree with my marriage and the choices I have made," she said.

Jurors previously heard Marten received nearly £50,000 from a trust fund before going on the run.

She said the care proceedings were "one of the most disgraceful cases". When asked about social services, she replied: "I don't believe they are there to help parents or children."

Marten told the court that she and Gordon had never done anything to harm any of their children, adding: "There's literally nothing I wouldn't do for my children".

She added: "Mark and I love our kids more than anything in the world, so I'm pretty angry they've had to go through this."

'I wanted baby with me'

She told the jury she and Gordon were moving every one to three days while she was pregnant with Victoria "so she would not be taken".

"I wanted Victoria with me for the first three to six months of her life so I could give her the love that she needs because I don't think it's fair for any children to be removed from her parents," she said.

After giving birth in a rented cottage in Northumberland on 24 December 2022, Marten said their plans "disintegrated" when their car "blew up" on 5 January.

"We just acted on impulse and instinct," she said. "What are we going to do to save Victoria?"

Marten denied carrying Victoria in a carrier bag at any time before she died and said they decided to buy a tent in east London so they could "lay low away from prying eyes", but said Victoria's wellbeing was her "primary concern".

'Pride and joy'

She told the jury she planned to provide "parental love, warmth, care, food" and that being "on the move" did not matter as long as she was "provided for".

Marten said she only planned to be in a tent for a day or two, and went to the port town of Newhaven on 8 January to rent a cottage and find someone to smuggle them abroad.

Asked if she was concerned the weather might affect Victoria, she said: "Of course, because she's my baby, I was worried about her all the time.

"If I thought for one second the cold would affect her, it was too cold, or we didn't have enough items to keep her warm we wouldn't have been in that position."

"Obviously it would be preferable to be in a house, that's just common sense, but at no point did I think she's in danger because we took care of her. She was our pride and joy. She was very well protected and looked after."

Prosecutors do not accept the dates Marten says Victoria was born on and when she died.

The defendants, of no fixed address, deny manslaughter by gross negligence, perverting the course of justice, concealing the birth of a child, child cruelty and causing or allowing the death of a child.

The trial continues.

Do you want to know how to make corned beef hash? This recipe is easy to follow for anyone that wants a corned beef hash recipe.



Ingredients

1 x Tin Corned Beef 1 x Onion 2 x Baking Potatoes 1 x Small Can Baked Beans 1Tbsp Tomato Ketchup 1 Tbsp Worcestershire Sauce 1 Tsp Mustard 1 Tsp Onion Powder Salt & Pepper

Directions

Peel, chop and boil the potatoes for about 15 mins or until soft. Mash the potatoes with butter and a splash of milk, set aside. Fry the onion until soft. Mix the baked beans, tomato ketchup, worcestershire sauce, mustard, onion powder and salt and pepper together in a bowl. Cut the corned beef into chunks, mix with the beans and stir. Spread the corned beef mixture into an oven proof dish. Top with the mashed potato and grated cheese. Cook in the oven for about 25-30 mins.

A grandmother was left dangling upside down after her coat got caught in a shop's security shutters.

Anne Hughes, 71, was seen on CCTV being lifted 7ft into the air outside a convenience store in Rhondda Cynon Taf.

She has been dubbed "SuperAnne" in her home village in Wales and said the incident "could only happen to me".

Speaking at her home near the Best One shop in Tonteg, near Pontypridd, Ms Hughes said her thought at the time was "flipping heck".

"It's just lucky I've got a good sense of humour," she said.

The store shared the clip on its social media and it has been watched nearly two million times.

Ms Hughes was standing outside the store, where she works as a cleaner, waiting for it to open when the electric shutters were raised and her coat got stuck.

Footage showed her dangling upside down before a shopkeeper rescued her by holding her in his arms as the shutter was slowly lowered.

She said: "I've been suffering falls for the past six months or so and the doctors at the hospital think it's from low blood pressure - it was going up then."

"I'm learning to live with the fame. I'll never hear the end of it," Ms Hughes added.

"The shutter was completely open, then I screamed his [the shopkeeper's] name, and thank goodness he came out and lowered the shutter a little bit and managed to get me in his arms.

"And I just can remember saying to him 'just grab my head' - I was worried I was going to fall, I was pointing towards the floor."

But while Ms Hughes says she was shaken up by the incident, she was not injured.
